These simple crackers are slightly crunchy with the creamy hint of peanut butter, and make a delicious afternoon snack, travel treat, or lunch companion.

Ingredients

  • 1 Cup Buckwheat flour
  • 1/3 Cup Almond meal
  • 1 Cup Roasted unsalted peanuts
  • 1 tsp Sea Salt
  • 2 Tbsp Flaxseeds
  • 3/4 Cup water
  • 1 Cup Peanut butter

Instructions

  • Preheat oven to 180C.
  •  In a food processor, combine the buckwheat flour, almond meal, peanuts, salt and flaxseeds, pulse until the peanuts are finely chopped.
  •  In a separate bowl, whisk together the water & peanut butter until smooth,  add to the flour mixture and blend to form a dough.
  • Divide the dough into 2 equal portions. Roll out each portion of dough on a floured surface into a rectangle, about 0.5cm thick. This dough can be very crumbly, so fix any cracks that occur by pushing the dough back together with your fingers.
  • Cut the dough into squares about 5cm across & place on an ungreased cookie sheet. Prick each cracker with a fork.
  • Bake for 15 to 20 minutes or until the crackers are a deep brown. Remove from oven and cool on a rack. Serve as part of a snack.
