PROTEIN BARS (NO BAKE!)

INGREDIENTS:

100g rolled oats
80g Bindi Chocolate Organic Pea Protein Powder
100g medjool dates (pitted)
50g pepitas
50g sunflower seeds
50g shredded coconut
40g rice bran syrup
120g coconut oil (melted)
1 tsp vanilla essence
Pinch of sea salt
30g cacao nibs (add last)

METHOD:

Blitz oats and protein powder in food processor until finely ground.
Add all other ingredients except cacao nibs and blend again until all ingredients are chopping and mixture starts to come together.
Fold through cacao nibs.
Press into a tin lined with baking paper and sprinkle top with extra coconut and pepitas.
Refrigerate until firm and then slice into bars (makes approx. 16 bars).
