Instructions
  1. Place cashews and vanilla into food processor. Process on high until cashews are smooth and creamy like a paste.
  2. Add remaining ingredients (except desiccated coconut) and process on high until everything is well combined, and forms a soft “dough”.
  3. Spread coconut out on a plate.
  4. Roll chocolate/date mixture into balls and roll in coconut until evenly covered.
  5. Place in fridge to firm up for at least an hour.
Recipe Notes

*Note: If you wish you can use other ingredients to roll the protein balls in such as sesame seeds, hemp seeds, chia seeds, crushed nuts or crushed cacao nibs. For a VEGAN option, please substitute the honey for maple syrup.
