  1. Preheat oven to 180C.
  2.  In a food processor, combine the buckwheat flour, almond meal, peanuts, salt and flaxseeds, pulse until the peanuts are finely chopped.
  3.  In a separate bowl, whisk together the water & peanut butter until smooth,  add to the flour mixture and blend to form a dough.
  4. Divide the dough into 2 equal portions. Roll out each portion of dough on a floured surface into a rectangle, about 0.5cm thick. This dough can be very crumbly, so fix any cracks that occur by pushing the dough back together with your fingers.
  5. Cut the dough into squares about 5cm across & place on an ungreased cookie sheet. Prick each cracker with a fork.
  6. Bake for 15 to 20 minutes or until the crackers are a deep brown. Remove from oven and cool on a rack. Serve as part of a snack.
