  1. Place all the ingredients (except the parsley if using) in to a food processor.
  2. Blitz on high and mix until smooth. Scrape down sides if necessary and mix again.
  3. Place in a jar and refrigerate.
  4. 4. Just before serving sprinkle chopped parsley on top. Add more garlic and salt if desired. If you want this thinner to serve as a dip, add more lemon juice or a little water.
