Orange and Date Protein Loaf

As the weather cools here in the south of WA, so the training and work load seems to be increasing. Spending some weekend time in the kitchen creating wholesome snacks is a favourite of mine, and this date loaf is the perfect healthy twist on the sugar loaded traditional version. Using honey and orange juice for just the right sweetness, we have added protein to help keep you satisfied and to ass some extra flavour too. You can slice these and freeze them individually, so you always have a health go-to snack option at the ready!

  1. Preheat oven to 160C.
  2. Add boiling water to orange juice to equal 1 cup.
  3. In a mixing bowl sift together the spelt flour, protein powder, baking powder, baking soda and salt.
  4. In a large mixing bowl, cream together the butter and honey, then add egg and grated orange zest.
  5. Add the orange juice (with water) and dry ingredients alternately, mixing together as you go.
  6. Once well combined add dates and finely chopped walnuts and fold through.
  7. Spoon in to a well-greased (or lined) loaf pan, smooth out the top with the back of a spoon and sprinkle over the roughly chopped walnuts.
  8. Bake in the oven for 50-60 minutes in oven or until cooked through. Keep an eye on the top of your loaf, you may need to cover it with foil towards to end so that it does not burn.
  9. Remove from oven and set aside to cool before slicing.
