Instructions
  1. Combine all ingredients in a large bowl, cover and refrigerate overnight.
  2. Spoon mixture into 24 muffin pans and bake at 180C for 20 to 25 minutes (do not overcook).
  3. Cool on wire rack.
Recipe Notes

These muffins are best if mixture is allowed to stand overnight in the fridge.

They are great to wrap individually, freeze and use for a healthy snack.
