What’s for lunch? This is the perfect ‘salad in a jar’ recipe. Whip three jars of salad together (complete with dressing) and you are ready for a healthy week. Easy!
You will need 3 mason jars, and in the first jar, mix together: 3 Tbsp olive oil
3 tsp red wine vinegar
3 tsp dijon mustard
Then spread the dressing between 3 jars.
Rinse and drain one can of chickpeas, and add one third to each jar.
Cherry tomatoes halved
Cabbage thinly sliced
Spinach leaves (fill to top of jar)
Add any extras you might like… try roasted seeds, crumbled fetta or olives.
The dressing on the bottom will keep your veggies crunchy if you store it in the fridge. When you are ready to eat just tip the jar up a few times and enjoy!
