Everyday Salad Jar
- 3 Mason Jars
- 3 Tbsp Olive oil
- 3 tsp Red Wine Vinegar
- 3 tsp Dijon Mustard
- 1 Can Chickpeas rinsed and drained
- 1 Cucumber chopped
- Cherry tomatoes halved
- Carrot grated
- Beetroot grated
- Cabbage thinly sliced
- Celery sliced
- Spinach leaves
- Topping Extras
Rinse and drain one can of chickpeas, and add one third to each jar.
Mix the dressing ingredients, and spread between the three jars.
Add the rest of the fresh ingredients, filling to the top of the jar with spinach.
Add any extras you might like… try roasted seeds, crumbled fetta or olives.
🙌 Adding your dressing on the bottom will keep your veggies crunchy if you store it in the fridge.
When you are ready to eat just tip the jar up a few times and enjoy!
